Today I am here with Kuthiraivali Kuzhi Paniyaram. Kuthiraivali is known as Barnyard millet in English and Jhangora in Hindi. I made Idli batter using kuthiraivali rice few days back, with the left over batter made this spicy paniyaram. This paniyaram was crispy on the outside and soft on the inside and was perfect, just the way a paniyaram has to be. Also since it is made of kuthiraivali, it is healthy too. So when you are looking for a healthy alternative you can try this KUTHIRAIVALI IDLI BATTER and when it is fresh try idli, then when it is couple of days old, try this paniyaram.

Kuthiraivali Kuzhi Paniyaram


South Indian style aebleskivers(paniyaram) made with Barnyard millet. Perfect for healthy and delicious breakfast. It is vegan & gluten free.

Yield : about 25 paniyarams (depending on size of the paniyaram pan)

Ingredients :

  • Kuthiraivali Rice Idli Batter : 2 Cups
  • Oil : 1 tsp + more (for frying paniyaram)
  • Mustard seeds : 1/2 Teaspoon
  • Urad dal : 1 Teaspoon
  • Onion : 1 large (finely chopped)
  • Green Chillies : 2 nos.
  • Curry leaves : 1 sprig (torn into pieces)
  • Cilantro : handful
  • Salt : As required

Instructions :

  1. Heat oil in a skillet, add mustard seeds, when they sputter, add urad dal and fry for a minute. Then add finely chopped onions, green chillies, curry leaves and fry till onions turn golden brown. Add salt just enough for this tempering as batter will have salt already. Add cilantro to this and mix well. Turn off the heat.
  2. Add this tempering to the batter, mix well. Heat paniyaram pan, add oil, then pour batter into the pan, cook for few minutes, flip them to the other side cook for few minutes, then remove from the pan.
  3. Repeat the process for the rest of the batter. Serve with Chutney of your choice. I served it with Mint Chutney.

Notes :

  • To the batter, you can add some grated carrots. It will look more attractive and is healthy.
  • Optionally, you can add grated coconut for more flavour.
  • Cook paniyaram in medium to low heat. If it is too hot, then paniyaram will brown too fast, however the inside will stay uncooked.
  • Also be generous while using oil. Every time pour oil, before adding batter, also a little when you flip them to the other side, this will ensure the outer of paniyaram is crispy and golden.
