Prep time :   Cook time :   Total time :
Yield : about 10 pedas

Ingredients :

  • Milk Powder : 1 Cup
  • Heavy Cream : 1/2 Cup
  • Saffron strands: 1 pinch
  • Warm milk : To soak saffron
  • Cardamom powder : 1/8 Teaspoon
  • Powdered Sugar : 1/4 Cup
  • Chopped nuts : As required to decorate

Instructions :

  1. In a heavy bottomed non stick pan, mix milk powder and heavy cream such that there are no lumps.
  2. Place this on medium heat and cook for about 10 - 12 minutes stirring continuously. The mixture will first soften and then come together leaving the sides of the pan.
  3. Now add soaked saffron and cardamom powder and cook for another 2-3 minutes. The mixture will soften and again come together as soft dough. Try to make a ball from the dough, you should be able to make it without being sticky. That is the right consistency.
  4. Turn off the heat and let it cool slightly. Then add the powdered sugar and knead well.
  5. Divide this mixture into 10 equal parts and form peda shape. If needed, you can decorate them with nuts in the centre of the peda.

Notes :

  • Don't add sugar when it is hot, then the dough will soften.
  • If the mixture turns dry, add milk little by little and knead to get the required consistency. If it turns loose, then add ground almonds and knead. Do not cook it again, it might turn chewy.
  • You can use any chopped nut to decorate the peda as per your taste.
