Blackberry Yogurt Muffins

Today I am here with blackberry yogurt muffins. My hubby got blackberries from super market. Though I have always wanted to try blackberries, when he actually got them, I was reluctant to eat them as is. I always resort to baking muffins, when I don't know what to do with the fruit(let it be any fruit). So this time again, I decided to bake muffins with blackberries. I baked these muffins using yogurt and without using butter. They came out so soft and moist that my kids loved it.

These soft and fluffy muffins are made with fresh blackberries and Yogurt. This recipe does not require butter.These muffins are great for breakfast or as a evening snack.

Yield : 16 Muffins

Ingredients :

  • Fresh Blackberries : 1 Cup(wash and quarter)
  • All Purpose Flour : 2 Cups
  • Baking Powder : 2 Teaspoon
  • Baking Soda : 1/2 Teaspoon
  • Salt : 1/2 Teaspoon
  • Eggs : 2 Nos
  • Yogurt : 1 Cup
  • White sugar: 1 Cup
  • Vanilla Extract : 1 1/2 Teaspoon
  • Oil : 1/4 Cup

Instructions :

  1. Pre heat the oven to 350F/ 180C / 160 Fan / Gas Mark 4. Prepare the muffin pan by greasing and flouring it or simply you can use cupcake liners.
  2. In a bowl, sift together all purpose flour, baking powder, baking soda, salt and keep it aside.
  3. In another bowl, beat eggs till they are fluffy. Then add yogurt and whisk well. To this add sugar, vanilla extract and oil and whisk well.
  4. To this yogurt mixture, add flour mixture little by little and mix well. To this add the chopped blackberries and mix such that they are evenly distributed in the batter.
  5. Pour this batter into prepared muffin pan such that each cup is about 80% full and bake for about 15 - 20 minutes till it is done.
  6. Let it cool for 5 minutes, then remove from the muffin pan and let it cool completely.

Notes :

  • Optionally, you can add zest of 1 lemon for additional flavor.
  • Baking time varies with each oven, mine took about 18 minutes.
  • Instead of blackberries, you can use strawberries, blueberries or raspberries too.
