Today I am here with spiced cranberry cake recipe. This cake is made in bundt pan using fresh cranberries and warm spices, making it perfect for baking during the holidays. This is the cake I baked for our New year's celebration this year. I read somewhere that cakes baked in ring shape (like bundt cakes) are very lucky when baked for the new year day. I am not sure if it is true or someone has made up the story but I thought this would be the right time to use my bundt pan which had been lying untouched for a really long time. We love cranberries a lot - both fresh and the dried ones. When I saw fresh cranberries in the store, I couldn't resist myself from getting it. I wanted to bake with these cranberries in the bundt pan. I have already posted a bundt cake recipe with cranberry - Cranberry Coffee Cake, the cake that I baked for 2014 new year. So this cake I wanted some variation and decided to use spices and nuts. I didn't do much decoration for the cake, except dusting it with icing sugar and then added some sugared cranberries. Everyone at home loved the cake.
Spiced Cranberry Bundt Cake
Spiced Cranberry Cake Recipe - Cake made with fresh cranberries, warm spices and pecans.Prep time: Baking time: Total time:
Yield: 1 bundt cake (12 cup pan)
Ingredients :
- All Purpose flour : 3 cups + 2 Tablespoon
- Baking Powder : 3 teaspoons
- Salt : 1/2 teaspoon
- Ground Cinnamon : 1 teaspoon
- Ground Cloves : 1/4 teaspoon
- Ground Nutmeg : 1/4 teaspoon
- Unsalted Butter : 3/4 cup
- Light Brown Sugar : 1 1/2 cups
- Eggs : 3 nos.
- Yogurt : 3/4 cup
- Milk : 1/4 cup
- Vanilla Extract : 1 1/2 teaspoon
- Fresh cranberries (Chopped) : 1 1/2 cup
- Pecans (Chopped) : 1/2 cup
For Decoration :
- Icing Sugar, as needed for dusting
- Sugared Cranberries , 1/4 cup
Instructions :
- Preheat the oven to 350 F / 180 C / 160 Fan / Gas Mark 4. Prepare the bundt pan by greasing and flouring it and keep it aside.
- Mix chopped cranberries and chopped pecans with 2 tablespoons of flour and keep it aside.
- In a bowl, sift together all dry ingredients together (all purpose flour, baking powder, ground cinnamon, ground nutmeg, ground cloves and salt. Keep it aside.
- Beat butter and sugar till it is light and fluffy. To it add eggs, one by one and keep beating. To this add yogurt and mix well. Add milk and vanilla and mix well.
- To this butter mixture, add flour little by little and mix to form a smooth batter.
- Now add the chopped cranberries and pecans and mix well such that they are evenly distributed in the batter.
- Pour the batter in the prepared bundt pan and bake for about 45 to 50 minutes till the cake is done. To check if the cake is done, insert cake tester in the cake and it has to comes out clean.
- Let the cake cool for 5 minutes, then remove it from the cake pan and then let it cool completely.
- Slice and serve the cake.
Notes :
- I used a 12 cup bundt pan for baking this cake. In case if you are not having it, then you can use any other pan too.
- Accordingly if you need, you can adjust the recipe. The ratio is for 1 cup of flour, 1 teaspoon of baking powder, 1/4 cup of butter, 1/2 cup of sugar, 1 egg, 1/4 cup of yogurt, 1-2 Tablespoon of milk and adjust the rest accordingly.
- I have used pecans here. You can use other nuts of your choice too.
- Baking time varies with each oven and based on the pan you use. So check yours accordingly.
