Today I am here with Avarakkai Paruppu Usili Recipe. It is South Indian style stir fry made with broad beans and lentils. This stir fry is vegan and is healthy. The lentils are soaked and ground coarsely and are steam cooked and in the mean time the broad beans are cooked till it is tender and then both are stir fried and can served as a side dish for rice along with gravy of your choice. I served this avarakkai paruppu usili with Vendakkai Mor kuzhambu. I feel this is a very comforting combination.

Avarakkai Paruppu Usili
This is a traditional South Indian stir fry made with lentils and Broad beans. This Vegan side dish is healthy.

Ingredients :
- Avarakkai / Indian Broad beans : about 1/2 lb
- Turmeric Powder : 1/4 Teaspoon
- Salt : As required
To grind into a coarse paste :
- Channa Dhal : 1/4 Cup
- Toor Dhal : 1/4 Cup
- Cumin Seeds : 1 Teaspoon
- Red Chillies : 2 - 3 nos.
- Asafoetida : a pinch
- Salt : As required
To Temper :
- Oil : 1 Tablespoon
- Mustard Seeds : 1/2 Teaspoon
- Urad dal : 1 Teaspoon
- Curry leaves : 1 Sprig
Instructions :
- Soak channa dal and toor dal for atleast 30 minutes to 1 hour.
- Grind soaked channa dal, toor dal, red chillies, cumin seeds, asafoetida, salt, coarsely without adding water. Then steam cook them for atleast 10 minutes. Then let them cool and crumble them.
- Cook Avarakkai with required water, salt and turmeric powder till it is tender.
- Heat oil in a pan, add mustard seeds and when they crack, add urad dal and curry leaves and fry for a minute. Then add the cooked avarakkai and saute for 2 minutes.
- Then add the lentil crumble and saute for another 2 minutes and turn off the heat.
- Serve it warm.
Notes :
- Adjust red chillies as per your personal heat tolerance level.
- Instead of avarakkai, paruppu usili can be made using beans, cluster beans etc.,
- Instead of using both channa dal and toor dal, you can use either channa dal only or toor dal only.
