Today I am here with Ginger Cake recipe. Usually ginger cake is made with molasses / treacle, golden syrup and brown sugar. But I have used honey and light brown sugar in this cake. So this is not the usual version of ginger cake. This cake has subtle flavor of ginger and other spices which makes it perfect for the holiday season. This cake is soft and moist and can be served as a snack cake with tea. So if you are looking for a ginger cake without molasses or corn syrup, then this is the cake for you. The warm spices in this cake makes it a perfect snack cake for this season.

Easy Ginger Cake with Honey recipe
Ginger cake made with honey and light brown sugar instead of molasses / treacle and golden syrup. This cake can be served as a snack with tea.Prep time: Baking time: Total time:

Ingredients :
- All purpose flour : 1 1/2 cup
- Baking powder : 1 1/2 teaspoon
- Ground ginger : 1 1/2 teaspoon
- Ground cinnamon : 1/2 teaspoon
- Ground nutmeg : 1/4 teaspoon
- Salt : 1/4 teaspoon
- Butter : 1/2 cup
- Light brown sugar : 1/2 cup
- Eggs : 2 Nos.
- Milk : 1/4 cup
- Honey : 1/4 cup
- Grated fresh ginger : 1 teaspoon (optional)
Instructions:
- Pre heat the oven to 350 F. Prepare the baking pan by greasing and flouring it.
- In a bowl, sift together, all purpose flour, baking powder, ground ginger, cinnamon and nutmeg along with salt and keep it aside.
- In another bowl, beat butter and sugar well. Then add eggs one by one and beat till they are light and fluffy.
- To this mixture add milk and honey and mix well.
- Now add the flour mixture to this butter mixture little by little and mix well till they are combined well into a smooth batter. Finally add the grated ginger and mix well.
- Pour the batter into the prepared baking pan and bake for 20-30 minutes till the cake is done.
- Remove from the oven, let it cool slightly then remove from the pan. Let it cool completely and then slice and serve.
Notes:
- I have used Light Brown sugar. But using dark brown sugar will yield a beautiful color.
- I used a 9 inch square pan and my cake was done in about 17 minutes. You can use 8 inch square pan or loaf pan if you have. Based on the pan size, baking time will vary, check accordingly.
- To check, if the cake is done, insert a cake tester, in the middle of the cake and it has to come out clean.
- Let the cake cool completely before slicing.
