Egg less Christmas Fruit Cake (without alcohol) | Plum Cake without egg Recipe

Today I am here with Christmas Fruit Cake recipe made without egg and without alcohol. I have already posted a Fruit Cake recipe with Egg but without alcohol. This fruit cake is also called Plum cake back in India. This cake is loaded with dry fruits and nuts and the spices in the cake, makes it exotic. It is my favorite Cake. Though this cake is famous during the Christmas season, it is always available year round in the bakeries. I wanted to post the egg less version of the Christmas Fruit cake and experimented with so many recipes until I arrived at this recipe, which is easy and fool proof recipe for perfect Christmas fruit cake. I have used dark muscovado sugar in the recipe and hence I didn't have to make the caramel syrup for the fruit cake, which is the trickiest part for me. It would take atleast 2 attempts for me to get the caramel syrup right. With that part skipped, all other part is easy and the result is an aromatic, tastier fruit cake just like the one available in the bakeries.

Christmas Fruit Cake Recipe

Easy recipe for Fruit Cake made without egg and alcohol. It is also known as Plum cake in Indian bakeries. This fruit cake is loaded with dried fruits and nuts. The warm spices added in this cake, makes it perfect for the holiday season.

Yield: one 9" X 5" loaf

Ingredients :

Dry Ingredients :
  • All purpose flour : 1 1/2 cup
  • Baking powder : 1 1/4 teaspoon
  • Baking soda : 1/2 teaspoon
  • Salt : 1/4 teaspoon
  • Ground cinnamon : 1/2 teaspoon
  • Ground ginger : 1/2 teaspoon
  • Ground nutmeg : 1/4 teaspoon
  • Ground cloves : 1/4 teaspoon
Wet Ingredients :
  • Yogurt : 1 cup
  • Dark Muscovado sugar : 3/4 cup
  • Honey : 2 Tablespoons
  • Milk : 6 Tablespoons
  • Oil : 1/4 cup
  • Vanilla extract : 1 teaspoon
To Soak
  • Tutti frutti (candied papaya) : 1/4 cup
  • Candied lemon and orange peels : 1/4 cup
  • Dried Cranberries : 1/4 cup
  • Dates (chopped) : 1/4 cup
  • Raisins : 1/4 cup
  • Almonds (chopped) : 1/4 cup
  • Cashews (chopped) : 1/4 cup
  • Orange Juice : as needed

Instructions :

  1. Take all the ingredients listed under 'To Soak' in a bowl, pour orange juice just enough to cover them and let it soak atleast for 2 hours. It can be soaked up to a day but inside refrigerator.
  2. Preheat the oven to 350 F / 180 C / 160 Fan / Gas Mark 4. Prepare the cake pan by greasing and flouring it. I have used 9" X 5" loaf pan.
  3. In a bowl, sift together all the 'Dry Ingredients' together and keep it aside.
  4. In another bowl, mix yogurt and dark muscavado sugar well. Then add honey, milk, oil and vanilla extract and mix well.
  5. Now add the flour mixture little by little to the yogurt mixture and mix well till they are fully combined.
  6. Now drain the soaked dry fruits and nuts and add them to the cake batter and mix till they are evenly distributed in the batter.
  7. Pour the cake batter into the prepared cake pan and bake for 30 minutes. Then reduce the oven temperature to 325 F / 170 C / 150 Fan / Gas mark 3 and bake for another 20 - 30 minutes till the cake is done.
  8. Remove the cake from oven, let it cool for 5 minutes then remove from the cake pan and then let it cool completely. Then slice and serve.

Notes:

  • You can use any dry fruit and nut of your choice. But do add the candied orange and lemon peels, do not skip them.
  • For soaking, you can add either apple juice or orange juice.
  • I have used dark muscovado sugar. It has molasses flavor and is moist. If you can't find it you can use dark brown sugar or demerara sugar.
  • Baking time varies with the type and size of cake pan you use. So check yours accordingly. I baked my cake for 30 minutes @ 350 F and 30 minutes @ 325 F. It took total of 60 minutes for 9" X 5" loaf pan.
  • I used glazed cherries and pecans to decorate the cake. After the cake batter is poured in the cake pan, I arranged them on top. As I didn't want them to get burned, when reduced the oven temperature to 325, took the pan out, covered it with silver foil and continued to bake for rest of the baking time.
  • I feel the cake tastes the best when it is completely cooled.
