Egg less Cinnamon Sugar Donut Muffins

Today I am here with Cinnamon sugar donut muffins. These are bite sized mini muffins, that resemble donut holes and are covered with cinnamon sugar. These muffins turned out delicious and quite addictive. One cannot stop with just one muffin and these vanished in very little time. My kids loved it. Next time when I bake these muffins, I am going to double the recipe. This is a easy to follow recipe with minimal effort required. So when you crave for something sweet this winter, why not try this cinnamon sugar donut muffins, which will be ready in few minutes.

Cinnamon Sugar Donut Muffins without egg

Cinnamon sugar donut muffins are soft and spongy mini muffins and they resemble donut holes.These bite sized muffins have mild nutmeg flavor and are covered in cinnamon flavored sugar. These muffins are egg-less.

Yield: about 24 mini muffins

Ingredients :

  • All purpose flour : 1 cup
  • Baking powder : 1 teaspoon
  • Ground Cinnamon : 1/2 teaspoon
  • Ground Nutmeg : 1/4 teaspoon
  • Salt : 1/4 teaspoon
  • Sugar : 1/3 cup
  • Melted Butter : 1/4 cup
  • Milk : 1/2 cup
  • Vanilla extract : 1/2 teaspoon

For topping :

  • Melted Butter : 1/4 cup
  • White Granulated Sugar : 1/4 cup
  • Ground Cinnamon : 1 teaspoon

Instructions :

  1. Preheat the oven to 375 F / 190 C / 170 Fan / Gas Mark 5. Prepare the mini muffin pan by greasing and flouring it and keep it aside.
  2. In a bowl, sift together, all purpose flour, baking powder, ground cinnamon, ground nutmeg and salt.
  3. In another bowl, add melted butter and sugar and mix well. Then add milk and vanilla extract and mix well. To this mixture add the flour mixture, little by little and mix well such that a smooth batter is formed.
  4. Fill in the prepared mini muffin pan such that each muffin cup is half full.
  5. Bake for about 15-17 minutes till the muffin is done.
  6. In the meantime, prepare the topping. Mix ground cinnamon in the sugar and keep it ready along with melted butter.
  7. When the muffin is removed from the oven let it cool for 5 minutes then remove from the muffin pan. Then dip them in the melted butter and roll them in the prepare cinnamon sugar mixture, shake off any excess sugar. Repeat the process for the rest of the muffins. Let them cool completely. Then serve it.

Notes :

  • I have used mini muffin pan. You can use normal muffin pan too. But baking time will vary.
  • Original recipe called for about 1/2 cup of sugar. Since this muffin is rolled in cinnamon sugar, I reduced the sugar to 1/3 cup.
  • With each oven, baking time varies. Check yours accordingly. Take care not to over bake the muffins then they will turn dry.
