My daughter is fond of mushrooms. Mushrooms are very nutritious, so we encourage her in that aspect and I keep trying different recipes using mushroom. Last week I prepared this mushroom masala for lunch and served it with Baby Corn Pulao. It can be served with Chappathi/rotis too. Today I am going to share this mushroom masala recipe.

What are the ingredients needed?
Mushroom, 1 lb
Oil, 2-3 teaspoons
Cumin seeds, 1/2 teaspoon
Onion, 1 no (finely chopped)
Tomatoes, 2 medium sized (finely chopped)
Chilli powder, 1 teaspoon
Coriander powder, 1 Tablespoon
Turmeric powder, 1/4 teaspoon
Salt, to taste
Cilantro, to garnish
For make masala paste
Onion, 1 no (chopped)
Garlic, 4-5 cloves
Ginger, about 1 inch long piece
Fennel seeds, 1/2 teaspoon
Cloves, 4 nos
Cinnamon stick, a small piece
Grated coconut, 2 Tablespoon
How to make Mushroom Masala?
- Wash, clean and chop mushrooms.
- Take all the ingredients listed for masala paste and grind it into a fine paste and set it aside.
- Heat oil and add cumin seeds and when they sputter, add chopped onions and fry till they turn translucent.
- Then add tomatoes and cook till they are cooked and mushy.
- Now add the ground masala along with turmeric powder, coriander powder, chilli powder and mix well and cook till the raw smell goes. Sprinkle some water if necessary.
- Now add the chopped mushroom, required water,along with salt, mix well, then cover and cook for 3-4 minutes in medium heat and reduce to low heat and simmer till it reaches required consistency.
- Garnish with cilantro and serve it warm.
It serves 4-5 persons.
Notes:
- I have used white button mushrooms here. You can use other varieties of mushroom as well.
- Instead of adding chopped tomatoes, you can puree the tomatoes and add too .
- Adjust chilli powder as per your spice levels.
Totally love this. Love masala and make it often. Never used it with mushrooms.
