After posting a lot of sweet bakes, today I am here with a healthy snack recipe - Roasted almonds. It is prepared in oven with simple ingredients. It is very easy to make and it is very quick to make too. Just mix the almonds with the ingredients, roast it in oven and then enjoy this healthy and delicious snack.

Today I am here with Cumin cookies recipe. These are cumin flavored salt cookies that are made in Indian bakery style. These cookies are easy to make and are egg free. The ingredients are mixed and the dough is rolled into a log and chilled for about 30 minutes and then the log is sliced and the slices are baked for about 15 minutes. When the cookies are cooled, they are ready. No other special technique is required for this cookie. They make a perfect combination for tea.

Today I am here with another fruit cake recipe. This fruit cake is made with rum soaked dry fruits. Then it is let to mature for another week by feeding it with rum. Resulting cake is moist and flavorful. This cake involves a little planning ahead unlike the other cakes. In India, usually around November end or December first week, a event called Cake mixing ceremony takes places in almost all star hotels where all the chefs and guests gather and mix dry fruits with liquor to let them soak till they are ready to baked into fruit cakes or puddings. The longer the fruit soaks the more flavorful it will be. I soaked the dry fruits for one month and then baked the cake and let it mature for another week by feeding/basting/ brushing it with rum once in two days. The cake matured by feeding with rum, lets the cake stay moist for a long time and increases the flavor of the cake. The shelf life is more for this kind of cake. They stay good for a really long time as alcohol acts as a preservative.

Today I am here with Cinnamon sugar donut muffins. These are bite sized mini muffins, that resemble donut holes and are covered with cinnamon sugar. These muffins turned out delicious and quite addictive. One cannot stop with just one muffin and these vanished in very little time. My kids loved it. Next time when I bake these muffins, I am going to double the recipe. This is a easy to follow recipe with minimal effort required. So when you crave for something sweet this winter, why not try this cinnamon sugar donut muffins, which will be ready in few minutes.

Today I am here with a recipe for perfect whole roasted chicken with Indian spices. We love chicken and my daughter has been demanding for whole roasted chicken for a long time. In fact her initial demand was whole turkey during Thanksgiving, but somehow she settled for whole chicken. Finally this weekend, Hubby got medium sized chicken from super market and I roasted it in oven and it came out perfect - juicy and tender. I just followed my own recipe for the marinade while for the cooking / roasting time followed the instructions given on the package (in which the chicken was packed). Never thought roasting a whole chicken would be this easy.

Today I am here with Christmas Fruit Cake recipe made without egg and without alcohol. I have already posted a Fruit Cake recipe with Egg but without alcohol. This fruit cake is also called Plum cake back in India. This cake is loaded with dry fruits and nuts and the spices in the cake, makes it exotic. It is my favorite Cake. Though this cake is famous during the Christmas season, it is always available year round in the bakeries. I wanted to post the egg less version of the Christmas Fruit cake and experimented with so many recipes until I arrived at this recipe, which is easy and fool proof recipe for perfect Christmas fruit cake. I have used dark muscovado sugar in the recipe and hence I didn't have to make the caramel syrup for the fruit cake, which is the trickiest part for me. It would take atleast 2 attempts for me to get the caramel syrup right. With that part skipped, all other part is easy and the result is an aromatic, tastier fruit cake just like the one available in the bakeries.

Today I am here with Snowball Cookies Recipe. This cookie has so many different names - Mexican wedding cookies, Russian tea cakes, Pecan butter balls, Pecan Cookie Balls etc., and many more. But whatever may be the name, it is a delicious melt in the mouth, shortbread cookie loaded with pecans and are rolled in powdered sugar. As it is covered by powdered sugar, it gives a look as if it is covered with snow, may be that is why it is called snowball cookies. It looks very attractive and also it is very easy to make. I wanted to bake these cookies for longtime and finally could bake it today. It came out very well and kids loved it very much.

Today I am here with Red Velvet cupcakes with cream cheese frosting. These are red colored, soft velvety cakes with mild chocolate flavor. I love red velvet cakes and while living in US, I would bake them using box mix and have never tried making it from scratch. But it has been on my 'to bake' list for a longtime. Finally I baked these cupcakes today and it came out very well - so soft and velvety. The frosting which is light, fluffy and not overly sweet, makes the cupcake even more delightful. Be it Christmas or Valentine's day, these cupcakes are perfect for both the occasions because of their beautiful red color. Who doesn't like cupcakes with beautiful color and flavor?

Today I am here with Ginger Cake recipe. Usually ginger cake is made with molasses / treacle, golden syrup and brown sugar. But I have used honey and light brown sugar in this cake. So this is not the usual version of ginger cake. This cake has subtle flavor of ginger and other spices which makes it perfect for the holiday season. Today I am here with White Chocolate Chip cranberry cookies recipe. These are soft baked cookies with white chocolate chips and dried cranberries. Unlike the regular cookies, these cookies are soft and kind of chewy. I like the combination of white chocolate and cranberries in this cookie - they make the cookies look Christmass'y. So this cookie is perfect for the holiday season. When I baked this cookie recently, I asked my kids to help me and they enjoyed doing it. Baking with kids is always fun and this made them so excited about the cookies. They couldn't wait till the cookies to come out of the oven and cool down. Some how I managed to keep them away till then and when the cookies are ready, they totally loved it. YUM is the word! I loved it too. This is the first recipe, I tried with my new hand mixer (kenwood kmix) that I got recently for Black Friday Sale. Ah!! I totally fell in love with it. Preparing a cookie dough was a breeze with that. Anyway all the stories aside, let us come to the recipe now.

Today I am posting Kesar Nankhatai recipe here. These are saffron infused shortbread cookies. I love Nankhatai Cookies and have already posted its recipe here. This Diwali, I wanted to bake a variation of the usual nankhatai and came up with this recipe - Kesar Nankhatai. They were aromatic, crunchy and tasty cookies. These are egg free too. Today I am here with Chicken Pulao recipe. It is a easy to make flavorful one pot meal. This chicken Pulao is made with coconut milk. This is a mildly spiced Pulao, so I prefer to serve it with a spicy side dish. I have already posted my Chicken Biryani recipe (easy pressure cooker version). That is my go to recipe whenever I have to make biryani in a jiffy. Whenever I want to make something different I make this Chicken Pulao. These are the few differences of this Pulao from the usual biryani. It is made with coconut milk and also no tomatoes are added to this Pulao. Also I use green chillies for Pulao without adding red chilli powder.

Today I am here with Gobi 65 recipe. Cauliflower florets are dipped in a spicy batter and are deep fried and served. This is an addictive snack, I must say. This is one of the easiest recipe and if you make this dish as an appetizer for the party, am sure it is going to be a hit. Not only that, this can also be served as a side dish to rice. My kids love cauliflower as such, but they love Gobi 65 even more.

Today I am here with Baked Samosa Recipe. This baked version is a great alternative to deep fried version. This is a Punjabi style Samosa with spicy potato filling. I love samosas but I have never tried making them at home. Just when we go outside, we will eat it. This weekend, when we went out for shopping, we had samosas and my daughter said she loves them and asked if I can make them at home. So I decided to give it a try but instead of deep frying it, I chose to bake the samosas. This baked samosas tastes as delicious as the deep fried version and she loved it. One good part is that all the samosas were ready at a single stretch instead of standing and frying them in a batch. Since this is baked, it uses less oil and is good for the health. Today I am here with a simple healthy drink made with finger millet flour/ Ragi popularly known as Ragi malt. This version is the sweeter one and I will be posting the savory version too shortly. This drink can be prepared in few minutes. I have used Jaggery to sweeten this, as it is healthy natural sweetener and also added few chopped almonds, cashews. When I was a kid, I have seen my grandma soak the whole ragi, let it germinate, then dry it and powder it and prepare ragi malt with it. That is the best flour to prepare Ragi malt. But here I have used store bought ragi flour to prepare this, if you have home made ragi flour you can use it too.

After all the festival cooking, now I am back to normal cooking mode. Today I am going to share Kadai Chicken Recipe. It is a popular dish served in the restaurants but it is very easy to make at home too. It is a spicy chicken curry made with fresh spices and capsicum and is usually cooked in a wok(kadai), hence the name kadai chicken. Depending on your preference, you can adjust the consistency of the dish- dry, semi-gravy or as gravy. I made semi-gravy type of Kadai Chicken but in the picture it looks dry. It can be served with any Indian flat bread (roti,chappathi, naan, kulcha) or with mild pulao.

Today I am here with an easy Indian chocolate dessert- Chocolate Peda / Chocolate milk peda. I have used a quick and easy recipe to prepare this Chocolate Peda which I have adapted from Doodh peda which I have already posted here. This dessert is quick to prepare with milk powder, condensed milk and cocoa powder.
My son is a big fan of Chocolate and I wanted to make some sweet with chocolate for him this diwali. I had seen few of my fellow bloggers post chocolate peda with fresh homemade Khoya/mawa. But I didn't have much time to prepare khoya, so thought will follow the recipe of Doodh peda with few changes to make chocolate peda. I have also made the video of preparation of this Chocolate Peda and added it to Youtube too. It came out very well and both my kids loved it, especially my son. This is one of the sweet I made for for this Diwali and I am planning to make Gulab Jamun as well. Not only for Diwali, this sweet can be made anytime even for parties.

Today I am here with Corn flour halwa recipe. It is also known as Karachi Halwa. As the name suggests, it is made using corn flour/ Corn starch. It is very easy to make and it takes only few minutes to make this halwa. I wanted to post a halwa recipe for Diwali and suddenly this recipe came to my mind and I started googling and narrowed to this one. This halwa came out perfect and my kids liked it so much that they named it 'jelly sweet'. Usually my kids do not eat anything if it is sticky. My son avoids eating payasam itself. I was afraid about that when I made this sweet. But this halwa is not sticky and can be cut into slices. The texture, color and taste everything was good that kids loved it. Just the way they like it.

Today I am going to share Potato Murukku Recipe here. This is a easy to make murukku, which is made with potatoes. Boiled and mashed potatoes are used in place of urad dal or ground roasted gram flour in this recipe. The murukku has slight potato flavor. It is a quick and easy to make murukku variety. This weekend I had guests at home and I was planning to make Potato Croquettes as appetizer and I had boiled the potatoes as well. But when I started cooking other dishes I almost lost track of time and ended up skipping the appetizer. So I had boiled potatoes with me and was thinking what to make with them. Then my murukku mania struck me and I decided to make Murukku using those potatoes. Murukku came out well and my kids loved it too.

Today I am going to share Bread Jamun recipe, that is Gulab Jamun made using bread. After all the murukku mania, I wanted to post something sweet and easy to make. So Bread Jamun came to my mind. I have already posted Gulab Jamun made using milk powder. Making Jamuns using bread is very easy and also it is less time consuming. Today I am sharing Thattai Murukku recipe here. Some friends of mine used to call this thattu vadai too. This is my favorite type of murukku and my dad used to get a pack specially for me from a shop near home. According to me, that is where they make the best thattai murukku. But now being away from home, I have been missing that murukku, so I started making it myself. Also this is the first variety of murukku I learnt to make. I used to make this for every diwali since then but still couldn't post this in the blog. This time I definitely wanted to post this in the blog as Diwali special. The recipe is very easy and this does not need special murukku press/maker too. But the key for crispy thattai lies in how thinly you flatten it and also the temperature of the oil has to be perfect, neither too high nor too low.

Today I am sharing Butter murukku recipe here. My kids are in vacation and I wanted to make something for them to munch on. As diwali is coming near, I thought if I made murukku I can feed both my blog and the kids. I must say this murukku is quite addictive and they were vanishing in a quite high speed. Kids loved this and they wanted to help me while I was making it too. But since this involved oil and frying, I was afraid to let them help. So my daughter helped me by shooting the video of butter murukku making process. It was shot in low light and in phone, so video quality is not the best but since my daughter shot it I had uploaded it in you tube and also thought it might be helpful for beginners in cooking to understand better. Also this is the first video in Divya's Culinary Journey. Coming to today's recipe, I made this butter murukku with store bought rice flour. It is easy to make and even a beginner in cooking can make perfect butter murukkus without any difficulty following this recipe.

Today I am sharing a simple recipe for Yam Fry (Senai Kizhangu Fry). It is one of my favorite vegetable since childhood. It was only after marriage I came to know that this vegetable is also know as Karunai Kizhangu. In English this is called as Elephant foot yam or just as elephant yam. My mom makes different recipes with this yam but the one I love the most is deep fried yam seasoned with salt and chilli powder. Whenever she makes this I would finish my food without any complaints. I tried to recreate the taste of it in this recipe without actually deep frying it. My kids loved this too.

Today I am going to share Chocolate Banana Bread Recipe. It is a quick bread made with bananas and cocoa powder, also it is Eggless. I had some over ripe bananas and I was planning to bake Eggless Banana muffins. But my son demanded chocolate cake so I had to change my plan and make Eggless Chocolate Banana bread. I am going to share Rava laddu Recipe today. As it is festive season, fellow bloggers are posting a lot of festive recipes and I wanted to post one too. So I decided to make Rava ladoo, as both my kids are fond of laddus. Specially my elder one likes Laddu made of Rava(semolina) so much. My aunt makes it specially for my daughter whenever we visit her. Rava laddu is a easy to make sweet and it can be made even in the last minute.It will be ready in few minutes and does not require any preparation, also it requires only few ingredients. This version of Rava laddu is the simplest one and does not need any grated coconut or condensed milk.

I am going to share Baby corn Manchurian recipe today. I prepared the semi dry version and it can be served as an appetizer. This is a Indo Chinese recipe where baby corn fritters are tossed in a sweet,spicy,tangy sauce. I have already posted Gobi Manchurian and Mushroom Manchurian recipe before. I felt this is very easy to make and just that it is a little time consuming but it is totally worth it. My kids totally loved this baby corn manchurian. Even before the manchurian was ready, my kids kept gobbling the baby corn fritters as I was preparing them. I had to shoo them away to save them from finishing it before I could toss them in the sauce. Then they couldn't wait till I finished clicking the pictures. They loved the end product too. Some how this baby corn manchurian is a great hit at home. It can be served with Vegetable fried Rice or noodles or can be had just as an appetizer.

I am going to share Kadai Paneer recipe today. It is a easy to make dish using paneer, in a spicy tomato sauce, cooked in a Kadai (Wok). It is also known as karahi paneer or kadhai paneer. There are different versions of this dish - dry, semi-gravy or gravy too. This depends on the consistency you prefer. My daughter is a big fan of paneer and I make different varieties of panneer dishes for her. Even the little one has started to like paneer so much that they finish their food faster when paneer is served. So I will be sharing more paneer recipes that I try for them here in my blog. Today I am going to share a simple recipe for Oven Roasted Brussel sprouts. This week Hubby got brussel sprouts fresh from the market, on the way back home from work. I must admit that I am not much familiar with this vegetable. My daughter calls them "baby cabbage" because they look like miniature cabbages. I have prepared this once before and decided to cook these in the same way too- Oven roast them. I tossed them with few ingredients and roasted them in oven and they are ready. We had it just like that as you would eat french fries. They tasted best when they were warm.

I have been posting capsicum recipes for the past three days. My daughter was so upset that I have been making capsicum everyday at home and to cheer her up I baked Strawberry muffins for breakfast yesterday. I have already posted strawberry muffin recipe with egg and also Strawberry banana muffins made in whole wheat flour. I usually follow either of the 2 recipes for baking strawberry muffins. But this time I wanted to bake without egg and tried this recipe. It came out so soft and spongy. Kids loved it. It is definitely a fool proof recipe for the perfect egg less strawberry muffin.

The recipe I am sharing today is Capsicum Chutney. There are capsicums still left in the bag hubby got last week and I am trying to use them in different ways to feed both my family and blog. After posting capsicum masala curry , a side dish for Chappathi, I wanted to post a side dish for idli and dosa too. Today I am sharing here a quick and easy to make side dish for Roti/ Chappathi using Capsicum- Capsicum masala Curry. My Husband is so fond of Capsicum and he got a bag full of them. Mushroom biryani is the first choice if we look for a vegetarian alternative for a non vegetarian biryani. This year(2015) Vinayagar Chaturthi comes on 17th September.That is in another 2 days. It is kozhukattai recipes everywhere in the blog world. This tempted me too. So I have decided to share some basic kozhukattai recipes for this Ganesh Chaturthi in the next 2 days, that can be easily made using rice flour.
The recipe I am sharing today is sweeter version of Pidi Kozhukattai that is made with Jaggery, grated coconut and powdered cardamom. As I prepared it just to post in the blog, I made only few and my kids liked it so much that they ate all and complained that I hadn't made enough for them. I have promised them that I will make these sweet kozhukattai's again for Vinayagar Chaturthi. Since it was evening, there wasn't much light and also I couldn't keep the kids waiting, so clicked just few pictures. May be will update with better pictures later.

I have heard a lot about the health benefits of millets before, but only recently we have started including Thinai (Foxtail millet) in our diet. At first, I got Thinai Arisi / foxtail millet rice in a exhibition stall. I asked the person in the stall if there are any special instructions for cooking this millet, he said you can cook it just as you cook normal rice. I made Ven Pongal with it and it came out very well. Since then I have made this Pongal almost 4-5 times. As I was away from blogging then, it didn't make it to the blog. When I recently made this for Krishna Jayanthi to offer to God, I clicked few pictures to post it here.
I have made this Venpongal as a vegan version without adding ghee. It is healthy and delicious as there is moong dal along with foxtail millet and is flavored with cumin, pepper and a hint of ginger.

I am sharing Chicken Sukka Varuval Recipe today. It is one of the famous dishes in Chettinad restaurants and whenever we go there, we will either order Chicken Chukka or Mutton Chukka. This restaurant style recipe can be easily prepared at home. After being in abroad, we don't get the luxury to visit restaurants as we would in India, had to try replicating at home. Hello Friends, It has been long since I have blogged. After moving to India from US, it had been a busy phase of life where there were so many other things that took priority and couldn't find time for blogging. Though I tried to post few recipes from there but couldn't stay active in the blogging front. Neither I took my camera out nor my laptop. Now we have moved to UK for Hubby's Project. After coming here, spent first few days for house-hunt and other stuff. Now that we are finally settled, I wanted to get back to blogging. I cooked and took pictures of few recipes but didn't post them still. Just was waiting to make something sweet, as this will be my first post after the break. I made Paal Payasam for Gokulashtami and thought why not post this and here I am with the recipe.
Paal Payasam is a traditional South Indian dessert. It is easy to prepare and very delicious too. I prepared this in the pan (without pressure cooker) while it can be made in pressure cooker too. The creamy milk and rice gives a comforting feel to this payasam.
