Pink Velvet cupcakes are pink colored cupcakes with velvety soft texture. Pink color makes it perfect for a girl's birthday party and also for Valentine's day. This recipe can be used to make regular cakes instead of cupcakes too.Using this recipe, I made doll cake for my daughter's birthday. But couldn't post the recipe that time. Now I made these pink velvet cupcakes for Valentine's day potluck, I didn't want to miss the chance to post this recipe again. So as soon as I finished baking, though the lighting was poor, I clicked some pictures. Here I am posting the recipe of Pink Velvet cupcakes with butter cream frosting.

What are the ingredients needed?
For cupcakes
Unsalted Butter (Room temperature), 1 cup
Sugar, 1 1/4 cup
Pink food coloring, as needed (about 1/8 teaspoon)
Eggs, 3 nos
Vanilla extract, 2 teaspoon
All purpose flour, 2 1/2 cup
Baking powder, 1 1/2 teaspoon
Baking soda, 1/4 teaspoon
Salt, 1/4 teaspoon
Buttermilk, 1 cup
Butter cream frosting
Unsalted Butter (Room temperature), 1 cup
Confectioner's sugar, 4 cups
Milk, 2-3 tablespoons
Vanilla extract, 2 teaspoons
Pink color, as needed

How it is made?
- Preheat the oven to 350 F. Prepare the cupcake pan by lining it with paper liners and keep them aside.
- Cream butter, pink food color and sugar together until they are fluffy. Now add one egg at a time and continue to beat well. Finally add vanilla and mix well.
- In a bowl combine together all purpose flour, salt, baking soda, baking powder and add this flour mixture to the creamed butter mixture little by little, alternating with buttermilk and mix well till they are well blended.
- Now fill in the batter in the prepared cupcake pan such that it is 3/4th full and bake this for about 20 -22 minutes or till it is done.
- Cool for 10 minutes then transfer it to wire rack and cool it completely before frosting it.
Butter cream frosting.
- Cream butter well till it is soft and fluffy. Then food color and vanilla extract and beat, till they are well blended.
- Now add the powdered sugar, little by little till they are well blended.
- To thin it add milk one tablespoon at a time and mix well.
- Butter cream frosting is ready.
Assembly:
- The cupcakes have to be cooled completely before frosting.
- Apply the frosting to the cupcakes and then decorate it as required.

Notes:
- This cupcakes can also be used with cream cheese frosting or white chocolate ganache as per the original recipe.
- Using this recipe, you will get 24 regular size cupcakes, about 60 mini cupcakes or two 9" round cakes. Baking time varies depending on the size of the cake.
- If the cake is over-baked, it becomes so dry.
