Corn Pulao is a flavorful rice made with freshly ground spices and sweet corn. It is a one pot meal which is very easy to put together. Since it is so quick to prepare, it is perfect for busy mornings, to pack for lunch. Not only for a simple lunch, this flavorful rice is great to be served as a part of fancy meal too.

What are the ingredients needed?
Rice, 2 cups
Sweet Corn kernels, 2 cups
Oil, 2 teaspoon
Fennel seeds, 1/2 teaspoon
Bay leaf, 1 nos.
Onion (medium size), 1 no. (sliced)
Green Chillies, 2-3 nos (slit)
Cilantro, a hand ful
To grind together
Garlic cloves, 4 nos (cleaned and de-skinned)
Ginger, 1" long small piece (washed and skin peeled)
Fennel seeds, 1/2 teaspoon
Cloves, 4 nos
Cinnamon stick, 1 " long stick
Cardamom, 4 nos (remove the skin and use only seeds)

How it is made?
- Grind the ingredients listed under 'to grind together' into fine paste and keep it ready.
- Turn on the stove and place the pressure cooker in heat. Then heat the oil and add fennel seeds, bay leaf and fry for a minute or two.
- Now add the sliced onions and green chillies and fry till the onions turn translucent. and then add the ground masala mixture and cook till the raw smell goes.
- Then add sweet corn kernels, and cook for a minute and add the rice along with required water and salt.
- Close the pressure cooker lid and pressure cook the rice till one whistle comes. Then reduce the heat to low and cook for 5 minutes and then turn off the heat.
- Wait till the pressure releases and then gently fluff the rice, garnish with cilantro and serve.

Notes:
- I used Basmati rice. You can use other rice like ponni or sona masoori too. So adjust the rice water ratio according to the rice you use.
- I used frozen sweet corn . You can use fresh corn too.
- You can add handful of mint leaves for extra flavor.
- If you are not particular about being vegan , then you can fry some cashews in a tablespoon of ghee and add to pulao, mix well and serve.
