Event Announcement -BAKE FEST # 27 for January 2014

We are in the last day of 2013 and the year is almost over. Tomorrow is the first day of the new year which  comes with a new beginning and new hopes. 
Wishing you all a happy and prosperous New year!!
I am happy to announce that Vardhini's Bake Fest is happening here for the month of January 2014. It has been really long since I hosted any event here. Thanks to Vardhini for giving me a chance to guest host Bake Fest and also I expect all your co-operation and participation for the event. 


The event runs for January 1st to January 31st, 2014. Here are some rules for the event

  1. Send in any recipe which has been baked / broiled.
  2. Only vegetarian or vegan recipes please. Eggs are allowed for baking.
  3. Usage of the logo is appreciated as it helps spread the word.
  4. Link to Vardhini's Bake Fest announcement and this announcement page is mandatory. If sending an old entry, it needs to be re-published with the links.
  5. You can send in any number of new entries and a maximum of 2 old entries.

Paneer Butter Masala Recipe | Restaurant style Paneer Butter Masala

Today I am here with another Paneer recipe- Paneer Butter Masala. It is the most popular dish in any Indian restaurant. I am a great fan of this dish. Whenever I go to restaurant, I always order Paneer Butter Masala until I started making it at home. Only then I realised it was so easy to prepare it as available in the restaurant at home itself. My kids love this too. Though not often, I have made this dish several times but it has never made to the blog. This time I managed to click some pictures. Here, it is the recipe for restaurant style panner butter masala. 


What are the ingredients needed?

To fry and grind into fine paste
Oil, 2- 3 teaspoons
Fennel seeds, 1/2 teaspoon
Cloves, 5 nos
Cinnamon, one 1" long piece
Cardamom, 4-5 nos.
Red Onion(large), 1 no.  (chopped)
Tomatoes(large), 2  nos. (chopped)
Ginger Garlic paste, 1 tablespoon
Chilli Powder, 1 teaspoon
Cumin powder, 1/2 teaspoon
Turmeric powder, 1/4 teaspoon
Coriander powder,  2 teaspoon
Garam masala, 1 teaspoon

Other ingredients:
Paneer (Indian Cottage cheese) , 8 oz  (diced into 1" cubes)
Butter, 2 tablespoon
Cumin seeds, 1/2 teaspoon
Bay leaf, 1-2 nos.
Cashews (whole), 9-10 nos.
Heavy cream, 1/4 cup + 1 tablespoon, to garnish (optional)
Sugar, 1 teaspoon (optional)
Kasoori methi (crushed),  1 tablespoon


How is made?
  1. Soak cashews in 1/4 cup warm water and grind it into a fine paste and set it aside.
  2. Heat skillet add oil, and fry the cubed paneer pieces such that they are slightly golden on all sides of the cube. Remove from the skillet and keep these paneer pieces aside. 
  3. To the same skillet, add fennel seeds,cloves, cinnamon, cardamom and fry for a minute or two, then add chopped onions and fry till they turn translucent.
  4. Now add the chopped tomatoes, ginger garlic paste, cumin powder, turmeric powder, coriander powder, garam masala and cook till the tomatoes are cooked and turn mushy.
  5. Now turn off the heat and let it come to room temperature. Then in a blender, puree this and set it aside.
  6. Add 2 tablespoons of butter in the skillet, add cumin seeds, then add bay leaf and fry for a minute. 
  7. Then add the pureed tomato mixture, add cashew mixture, mixture well. Cook for 1-2 minutes.
  8. Now add the heavy cream, mix well and let it cook for few minutes. 
  9. Now add the fried paneer pieces, mix well, adjust the consistency of the gravy by adding required water, add crushed kasoori methi, mix well and let it simmer for few more minutes. 
  10. Turn off the heat and serve it warm along with rice, roti/ chappathi or naan.
Notes: 
  • Instead of chilli powder, add kashmiri chilli powder. It gives nice colour to the gravy. 
  • Adjust the chilli powder as per the personal heat tolreance level.
  • Instead of heavy cream, you can replace it with milk.

Candied fruit Cookies | Tutti Frutti Cookies | Ice box cookies | Egg less Cookies

Today's recipe is Tutti frutti (Candied fruit) Cookies- Ice box cookies. I was planning to bake these Tutti Frutti cookies from the day I got tutti frutti from the nearby Indian store. But was putting it off for different reasons. Today when I woke up in the morning I realized it is the day before Christmas and my daughter wanted cookies for Santa. So immediately I got into action and baked these cookies. They tasted absolutely delicious and with the tutti frutti they looked absolutely gorgeous. My kids loved these cookies. I hope Santa will like it too. :)

Mushroom Pulao is a simple, flavorful rice. It is easy to make and can be prepared quickly, which makes it ideal for preparing it on a busy day for lunch. If you want to cook something fancy, but not much time in hand, then this is the dish for you. My daughter is fond of mushrooms. So I have been cooking mushrooms often these days. Last week made Mushroom Manchurian and today for lunch made these Mushroom Pulao and served it with Raitha. Here I am now with the recipe

Old Fashioned Sugar Cookies- Christmas Cookies


When one thinks of the holiday baking, Sugar Cookies always comes first. Today I am sharing the recipe of these simple Cookies. I baked these cookies along with my daughter, who shows lot of interest in baking too. She helped me with decorating the cookies too. We both really enjoyed baking together. The cookies were delicious. Even my 2 year old son enjoyed eating this cookies. 
We baked these cookies for the Home Bakers Challenge started by Priya Akka. This month, the challenge is hosted by Priya Ranjit. She challenged us with different holiday bakes- cookies, cakes and breads. I choose this simple cookie. These sugar cookies can be cut out in different shapes depending on the season. Since this is Christmas time, we used star, Christmas tree and candy cane shapes. You can use any other shape of your choice too

Vegetable Fried Rice (Indo- Chinese Style)

The recipe that I am sharing today is Vegetable Fried Rice. I prepared Vegetable Fried Rice for lunch along with Mushroom Manchurian for lunch last weekend. Vegetable Fried Rice is a simple dish that can be prepared in a jiffy.It is loaded with vegetables and with simple flavors, it is everyone's favorite. Even left over rice can be used to prepare this. I like to serve it with Gobi Manchurian or Mushroom Manchurian or other Indo-chinese gravy.

Idly Podi/ Idli Milagai Podi (Spicy lentil Powder )

I am posting the recipe of Idly podi today. Idly podi is always a must in our house. We have it with almost everything- idly, dosa, chappathi and rice.  Usually either my mom or my grandma makes it for us. When my mom came to visit us (2 yrs back) she made and brought it here, I was preserving and using it in ration. Finally when it was over, it struck that it was high time that I start making Idly podi on my own. I got recipes from various friends and made this recipe.The ratio of lentils varies in each recipe. Though I am yet to get my mom and grandma's recipe (which is by far my favorite). I will post that recipe too in the future . But for now I am posting the recipe which I have tried and liked it too.

Semiya Upma/ Vermicelli Upma


After posting all cakes and bakes, today I am posting a simple recipe, Semiya Upma / Vermicelli Upma. It is an easy and quick to make tiffin item. It is so versatile that it can be had for breakfast, dinner or even as a light meal. It is my favorite and my kids love it too. So I make it often at home. I sometimes pack it for lunch for my daughter too.

Devil's Food Cupcakes with Chocolate Ganache (Mini Cupcakes)


Few days back for Thanksgiving 2013, we had a potluck dinner and I made spiced carrot cupcakes and Devil's Food cupcakes. Today I am going to post the recipe of this Devil's food cupcake. I got the recipe from Martha Stewart's site. I baked this as a mini cupcakes. The cupcakes came out very soft and moist with rich chocolate flavor. Definitely a treat for chocolate lovers.

Honey Cardamom Cake - (Snack Cake)

I have been baking a lot lately and today I am again posting a baking recipe. It is Honey Cardamom Cake. Two days back, there was a sudden invitation from a friend for lunch. So baked this cake to take with me. I wanted to bake a snack cake without frosting and was browsing for recipe, and when I came across this one, I was sure this is the one. The cake did not disappoint me. It came out really well- soft and delicious. Everyone loved this cake and I got lot of appreciations for it. Here I am today sharing this recipe with you. If you love the flavor of honey and the aroma of cardamom, then this cake will definitely win your heart.

Carrot Cupcakes recipe | Carrot Cupcakes with Cream cheese Frosting


Hello Friends,How are you all doing?? Here in US, it is a long holiday weekend. On Thanksgiving day,We had  potluck with friends and for Black Friday did a lot of shopping and the other two days spent at home,all in all it is a fun and relaxing weekend.
