The recipe that I am sharing today is Vegetable Fried Rice. I prepared Vegetable Fried Rice for lunch along with Mushroom Manchurian for lunch last weekend. Vegetable Fried Rice is a simple dish that can be prepared in a jiffy.It is loaded with vegetables and with simple flavors, it is everyone's favorite. Even left over rice can be used to prepare this. I like to serve it with Gobi Manchurian or Mushroom Manchurian or other Indo-chinese gravy.
What are the ingredients needed?
Cooked Rice, 3 cups
Vegetables, 1 1/2 cups (1/2 cup Carrot, 1/2 cup beans, 1/4 cup peas, 1/4 cup sweet corn)
Oil, 2 tablespoon
Onion, 1/4 cup(finely chopped)
Bell pepper, 1/2 cup (chopped)
Green Chillies, 1 or 2 (optional)
Garlic, 4-5 cloves(finely minced)
Ginger, 1" long (finely sliced or grated)
Soya Sauce, 2 tablespoons
Chilli sauce, 1 tablespoon
Salt, as required
Ground pepper, 1/2 teaspoon
Spring onions/ green onions, 4-5 nos.
How it is made?
Onion, 1/4 cup(finely chopped)
Bell pepper, 1/2 cup (chopped)
Green Chillies, 1 or 2 (optional)
Garlic, 4-5 cloves(finely minced)
Ginger, 1" long (finely sliced or grated)
Soya Sauce, 2 tablespoons
Chilli sauce, 1 tablespoon
Salt, as required
Ground pepper, 1/2 teaspoon
Spring onions/ green onions, 4-5 nos.

Simple and easy to make Vegetable Fried Rice |
- Heat oil in a wok/heavy bottomed pan.
- Add chopped onions, bell pepper, green chillies (if using), garlic, ginger and saute till the onions turn translucent.
- Then add all the vegetables one by one and add required salt and mix well. Cover and let the vegetables cook. No need to add water. Take care not to overcook the vegetables.
- Then add the soya sauce and chilli sauce and mix well.
- Then add the cooked rice and ground pepper and mix well.
- Then garnish with chopped spring onions and serve.
- If using freshly cooked rice, it should be completely cooled and gently fluffed up before using it. If used warm, rice will break and get mashed.
- You can use any combination of vegetables for making fried rice. I have given the combination that I have used.
- Using green chillies is optional. Adjust the chilli sauce, pepper powder as per your personal preference too.
- Chop the spring onions, use the white part of them while sauteing onions, ginger, garlic itself. Then save the green part of the spring onions of garnishing.
- Add salt in moderation keeping in mind that soya sauce has salt too.
