
Few days back for Thanksgiving 2013, we had a potluck dinner and I made spiced carrot cupcakes and Devil's Food cupcakes. Today I am going to post the recipe of this Devil's food cupcake. I got the recipe from Martha Stewart's site. I baked this as a mini cupcakes. The cupcakes came out very soft and moist with rich chocolate flavor. Definitely a treat for chocolate lovers.

What are the ingredients needed?
Cocoa Powder, 1/3 cup
Hot water, 1/3 cup
All purpose flour, 1 1/2 cup
Baking soda, 1/2 teaspoon
Baking powder, 1/2 teaspoon
Salt. 1/2 teaspoon
Butter, 3/4 cup
Sugar, 1 cup
Eggs, 2nos.
Vanilla Extract, 2 teaspoon
Sour Cream, 1/2 cup
Chocolate Ganache, from the recipe below.
How it is made?
- Preheat the oven to 350F. Line the cupcake pan with cupcake liners.
- Mix hot water and cocoa well such that the mixture is smooth and let it cool to room temperature.
- Combine all purpose flour, baking soda, Baking powder, salt and keep it aside.
- Cream butter and sugar together. Then add eggs one by one and keep beating.
- Then stir in Vanilla extract and sour cream and mix well.
- Finally add the cocoa mixture and mix well till they are well blended.
- Pour the batter for about 3/4th full in each cup of the prepared cupcake pan and bake for about 10-11 minutes or till it is done (tooth pick inserted in the middle comes out clean).
- Let the cake cool for atleast 10-15 minutes then remove it from the pan, cool it completely and then apply frosting. and then decorate as you desire and then serve.
- It yields about 48 mini cupcakes or around 16 regular sized cupcakes.
Recipe for Chocolate Ganache
What are the ingredients needed?
Semi-sweet chocolate, coarsely chopped, 8 oz
Heavy cream, 1 cup
Butter, 1 tablespoon.
How it is made?
- Place the chopped chocolate in a heat proof bowl. Set it aside.
- Heat butter and heavy cream in a medium heat. Bring it to boil and turn off the heat.
- Add this butter mixture to chocolate and let it stand for few minutes and then whisk till it is smooth.
- Ganache is ready. Can be used to apply on cakes.
