The recipe I am going to share today is Mini chocolate cupcakes with butter cream frosting. I baked these for my daughter's school bake sale. I got the recipe of chocolate cupcake from the Joy of baking. It was for the regular sized cupcakes- I used the ingredients as mentioned in the recipe, just adjusted the baking time accordingly. I got 48 mini cupcakes with the recipe. These mini cupcakes are so cute, they will definitely win over any kids heart.

What are the ingredients needed?
Dutch processed cocoa powder, 1/2 cup
Hot boiling water, 1 cup
All purpose flour, 1 1/3 cup
Baking powder, 2 teaspoons
Salt, 1/4 teaspoon
Unsalted butter, 1/2 cup
Granulated White Sugar, 1 cup
Eggs, 2 nos
Vanilla Extract, 2 teaspoons

How it is made?
- Pre heat the oven to 350F and line the cupcake pan with cupcake liners and keep them ready.
- Mix hot water and cocoa powder well such that there are no lumps and set it aside till it reaches room temperature.
- In a small bowl, sift together all purpose flour, baking powder, salt and set it aside.
- In another bowl cream together butter and sugar, then add the eggs one by one and beat well, then add the vanilla extract and mix then add the flour mixture and mix well. Finally add the cooled cocoa mixture and stir to form a smooth mixture.
- Then fill each cupcake mould to about 2/3 full and let it bake for about 10-12 minutes till it is done. The tooth pick inserted has to come out clean. Take care not to over bake the cupcakes.
- Remove from the cupcake pan and let it cool completely then apply frosting as desired and decorate. I used M& M's and some sprinkles to decorate.

- With a mixer, cream butter until it is smooth. Then add vanilla extract to it and mix well.
- Then add powdered sugar little by little and beat well such that the mixture is smooth and fluffy.
- Finally add the required amount of color and mix till they are well blended.
