The recipe I am going to share today is Mini chocolate cupcakes with butter cream frosting. I baked these for my daughter's school bake sale. I got the recipe of chocolate cupcake from the Joy of baking. It was for the regular sized cupcakes- I used the ingredients as mentioned in the recipe, just adjusted the baking time accordingly. I got 48 mini cupcakes with the recipe. These mini cupcakes are so cute, they will definitely win over any kids heart.

Hello Friends, I am back with Banana Muffins that are egg less and butter less. I went into a kind of hibernation on the blogging side. It is due to my busy schedule with kids. It has been almost a week since I posted a recipe here. But today I got some motivation to post this recipe that has been sitting in my drafts for more than 2 weeks now. I had some over ripe bananas sitting in the kitchen counter, but didn't want to use egg and butter, so experimented and the muffins came out soft and delicious. Though I have already posted Banana Muffins (with Egg), Whole wheat banana Muffins and Whole wheat Strawberry banana muffins, I wanted to post this muffin recipe too. Today's recipe is Almond Cranberry Biscotti. I was never a fan of Biscotti until I tried this recipe. Unlike the traditional Italian Biscottis which are hard, this American style Biscotti is light and crunchy. I baked this for the Home Bakers Challenge by Priya Akka. This month's Challenge is Biscotti. No one at our home likes Biscotti, but I didn't want to miss the challenge too. I went ahead and baked the American style vanilla Biscotti but I had halved the recipe she had given. I also added almonds and dried cranberries to it. The biscottis came out so delicious, they were finished so soon. Am so glad that I didn't miss this challenge. I will be definitely baking this again.

Today I am sharing a simple and easy recipe made with Ginger- Inji Thuvaiyal. A spicy vegan dip made of ginger. Ginger has lot of health benefits like remedy to motion sickness, combating stomach discomfort, cold and flu protection, aids in digestion, strengthens immunity and so on. As the main ingredient of this recipe is ginger, it is loaded with these health benefits. This thuvaiyal can be had with rice and also can be had with Idly or dosa too.

As the weather is getting cold, I was craving for something spicy. Hence I cooked this Andhra style chicken curry, this weekend. I got this Kodi Kura recipe from one of our family friend. I had tasted this once at her home, I liked it so much that I had got the recipe from her then. But I tried it only now and the gravy came out really well. In the recipe she had given around 2 or more teaspoons of chilli powder, but I reduced it to 1 1/2 teaspoons. That is the only adjustment I made. This Kodi Kura is so flavorful, spicy and delicious that it is sure to tickle your taste buds.

Today I am going to share a simple snack I prepared for Diwali- Oma podi. I wanted to post this recipe before Diwali itself but got a little busy, so couldn't post it right on time. Today I am sharing a simple recipe using bitter gourd. I have come across so many people who say they do not like bitter gourd because of its bitterness. But it has been my favorite vegetable. Even then I don't cook this veggie very often because the kids don't prefer bitter gourd. I wanted my kids to eat this Veggie so thought will try a simple chips the way my mom used to prepare, when I was a kid. So last week, I made this bitter gourd chips and my daughter just loved it. I served it with dal rice. It is so easy to make and requires only 4 ingredients. It is Vegan too.
