
Today I am sharing the recipe of Spinach Cheddar Muffins, I baked for the Home Bakers Challenge started by Priya Akka. This month's host is Shama and she challenged us with 6 different recipes. I picked this spinach cheddar muffin. I made some adjustment to the original recipe since I felt it was bland. The muffin was soft but even after making the changes,I wouldn't say I love it. Since I have a sweet tooth, these didn't appeal much to me while my Hubby on the other hand liked these muffins. If you are a person who does not have sweet tooth, then this muffin is for you.

What are the ingredients needed?
All purpose flour, 1 1/2 cup
Baking powder, 2 teaspoon
Baking soda, 1/2 teaspoon
Garlic powder, 1/2 teaspoon
Cumin powder, 1/2 teaspoon
Pepper powder, 1 teaspoon
Salt, 1 teaspoon
Butter, 6 tablespoon
Egg, 1 no
Milk, 1 cup
Frozen Spinach, 1/2 cup (thawed, drained & squeezed dry)
Shredded Cheddar cheese, 1 cup

Spinach Cheddar Muffins |
- Pre heat the oven to 350 F. Prepare the muffin pan by greasing and flouring it and keep it aside.
- In a bowl, combine all the dry ingredients(flour, baking powder, baking soda, garlic, cumin, pepper powders & salt) and mix well.
- Slightly beat the egg and add to the mixture, then add the milk and keep mixing then add the spinach and cheese and mix till they are well blended.
- Spoon in the batter equally into each muffin cup and bake for about 25 minutes or till it is done. (check by inserting a toothpick and it comes out clean).
- Let it cool and remove it from the muffin pan and serve it.
Notes:
- You can also use whole wheat flour to make these muffins. Use about 1 cup of wheat flour and 1/2 cup of all purpose flour. When wheat flour is added, the batter becomes thick, then add 3-4 tablespoons of milk to get the batter in right consistency.
- The muffins tasted best the day they were baked not the next day. So plan your baking accordingly.
- Instead of frozen spinach, you can use fresh spinach too. Clean them, chop them and blanch them and use. Or you can saute them along with two tablespoon of finely chopped onions and use.
