Mixed Vegetable Pasta (Vegan) - Easy Pasta Recipes
We all love pasta in our family, especially the kids. I always look for different ways to prepare pasta. Two days back, I had to cook lunch for me and the kids while hubby had lunch outside. I didn't want to cook the usual lunch of rice and dhal, but wanted to cook something simple and also sneak in veggies and so ended up making this mixed vegetable pasta. This was so quick to prepare and with simple flavors, kids loved it and finished it in no time.

Kollu Rasam/ Horse gram Rasam
Fall has officially started and it is getting cold here. With the change in the weather, health is also likely to get affected. For the past 2 days, I have been suffering from sore throat and I prepared Kollu Rasam as a home remedy. I got the recipe from my friend Geetha and did some tweaks to suit my taste buds and It came out delicious and was so soothing for the sore throat. My husband too loved this rasam.
Coming to today's recipe- Kollu Rasam, It is a spicy tangy soup prepared with horse gram. Kollu is supposed to have lot of health benefits like remedy for cold, lowering cholesterol, helps in loosing weight etc., Though it is very good for health, pregnant ladies or person having tuberculosis & plethora must stay away from horse gram.

Blueberry Muffins Recipe (Without Egg) | Easy Blueberry Muffins

It is Sunday & I baked Blueberry muffins for breakfast. Usually Sundays we have pancakes for breakfast. Since tamil month Puratassi has started I wanted to make some thing egg less and I haven't experimented with egg less pancakes yet, so chose to bake Blueberry Muffins. It came out fabulous and my family liked it so much. Today I am posting the recipe for Blueberry muffins that are egg-less. Dry Chilli Chicken Recipe | Boneless Chilli chicken | Easy Restaurant style Chilli chicken.
Today I am posting the recipe of Chilli chicken made with boneless chicken. This dry version of chilli chicken can be served as an appetizer. This is my first indo-chinese post here. This boneless dry chilli chicken is also one of my favorites and usually order it when we go to restaurants. I tried recently at home and kids loved it too.

Spinach Cheddar Muffins (Savory)

Today I am sharing the recipe of Spinach Cheddar Muffins, I baked for the Home Bakers Challenge started by Priya Akka. This month's host is Shama and she challenged us with 6 different recipes. I picked this spinach cheddar muffin. I made some adjustment to the original recipe since I felt it was bland. The muffin was soft but even after making the changes,I wouldn't say I love it. Since I have a sweet tooth, these didn't appeal much to me while my Hubby on the other hand liked these muffins. If you are a person who does not have sweet tooth, then this muffin is for you.

Vendakkai Puli Kuzhambu (using coconut)
Today's recipe is Vendakkai Puli Kuzhambu. Okra is fried and simmered in a spicy tangy tamarind gravy. I make Puli Kuzhambu at least once in 15 days and is my favorite. This is kuzhambu is made with coconut. First fry the okra, keep it aside, then roast and grind fresh spices along with coconut and they are all simmered with tamarind extract and the result is a tasty flavorful kuzhambu. Using the same method, you can make variations by adding drumstick (murungakkai) for murungakkai puli kuzhambu, chickpeas (kondakadalai) for kondakadalai kuzhambu or just garlic for poondu kuzhambu, fish for meen kuzhambu and egg for egg kuzhambu or any other veggie of your choice too.

Basil Pesto Pasta (Vegan)

Today's recipe is Pasta with pesto, made with freshly picked basil leaves. My hubby has a green thumb and we have some plants in our balcony and Basil is also one among them. This weekend I wanted to cook something simple and yet delicious, so made this pasta. Though it was so easy to prepare,it was so flavorful, kids just loved it.

Black Forest Cake (Easy & Egg-less Version) using stabilized whipped cream icing
Black forest Cake is my favorite cake since childhood. It originated from Germany and it has layers of chocolate cake soaked in Kirschwasser (a liquor from cherries), whipped cream and cherries are used to fill in between layers and also for decorating the cake. Nowadays, this cake is also made without alcohol content. I am sure the cakes that I had in my childhood were also alcohol free but just loved how moist, soft the cakes were, with light whipped cream, the cherries and served chilled, tasted so heavenly.
I wanted to bake this cake for long but couldn't get to it. The cherry liquor, the sour cherries and the process of making it were little intimidating. So I took the easy route - baked a cake, used canned cherries and whipped cream. Though it is not the authentic black forest cake, it does tastes delicious and so easy to put together too. May be will bake the authentic version sometime in future, but for now I am happy with this version. The only thing I would do to improve the cake is that I used 2 thick layers of cake which I would tort each layer into 2 and then assemble such that there are 4 layers with whipped cream and cherries in between each layers.
