Today I am posting another recipe I made for Rajasthani Thali- Gatte ki Kadhi. Gattas are the gram flour dumplings that are boiled and sliced to bite sized pieces and are simmered in a yogurt based gravy(Kadhi). I served it with rice and it also can be served with parathas.
What are the ingredients needed?
For Gattas
Gram flour/ besan, 3/4 cup
Chilli powder, 1 teaspoon
Carom seeds, 1/8 teaspoon
Yogurt, 1 tablespoon
Oil, 1 tablespoon
Salt to taste
For the Kadhi
Yogurt, 2 cups (Well beaten)
Gram flour/besan, 1 tablespoon
Curry leaves, 1 sprig
Oil, 1 tablespoon
Cumin seeds, 1/2 teaspoon
Mustard seeds, 1/4 teaspoon
Asafoetida, a pinch
Turmeric powder, 1/4 teaspoon
Chilli powder, 1 teaspoon
Salt, to taste
Cilantro, to garnish
How it is made?
Preparation of the gattas
- Combine all the ingredients listed for gattas and knead to a firm dough with 1-2 tablespoons of water.
- Divide the mixture to 8 equal parts and roll it into a cylindrical log of about 1 " to 1 1/ 2" dia.
- Boil enough water, add the gattas and cook for about 7-8 minutes. Then drain them, let them cool and slice them to bite sized pieces and keep them aside.
Preparation of kadhi
- Whisk together yogurt, besan flour, 1/2 cup of water and curry leaves such that there are no lumps.
- Heat oil in a pan, add mustard seeds and cumin seeds, then add asafoetida, turmeric powder and chilli powder and saute for few seconds.
- Then add the yogurt mixture to this and mix well.
- Now add a cup of water, salt to taste and continue to stir.
- Then add the prepared gattas to the gravy, and bring it to boil and let it simmer for few minutes.
- Turn off the heat, garnish with cilantro and serve with rice/ paratha.
We call it gatte ki subzi and it is just yum! Craving for some now.
