Strawberry Thumbprint Cookies - Egg less

Today's recipe is Strawberry Thumbprint cookies that I prepared for the Home Baker's Challenge started by Priya Akka. This month Viji who blogs at Virunthu Unna Vaanga challenged us with Cookies. She gave us choice of 4 different cookies from which we had to bake the cookies of our choice or if interested can bake all the 4 cookies. I baked Strawberry Thumbprint cookies. The original recipe used nutella for the filling but I used Strawberry Jam. I baked it for my daughter's birthday party and it was a huge hit among the kids.
Egg less Strawberry Thumb print cookies with Jam

Recipe Source: Sinfully Spicy

What are the ingredients needed?

All Purpose Flour, 1 1/2 cups
Salt, 1/4 teaspoon
Baking Powder, 1/2 teaspoon
Unsalted Butter, (Room Temperature), 1/4 cup
Granulated White Sugar, 1/2 cup
Vanilla Extract, 1 teaspoon
Strawberries, 7-8 nos.(cleaned and hulled)
Red color, as needed
Strawberry Jam, as required

Strawberry Thumbprint cookies (Egg less)

How it is made?

  1. Take the strawberries and crush them well then add the red food color (about 2 drops) to get the desired color, mix well and set aside. This mixture should be about 3 - 4 tablespoons.
  2. Sift together flour, salt and baking powder and keep it aside.
  3. Cream butter and sugar together. To that add the vanilla extract and strawberry mixture and mix well.
  4. Then add the flour mixture and mix well to form dough. The dough might be slightly sticky.
  5. Cover the dough in cling wrap and refrigerate it for about an hour.
  6. Preheat the oven to 350F.
  7. Line the cookie sheet with parchment paper.
  8. Take out the refrigerated dough and grease your palm with oil and equally divide and roll the cookie dough into small balls.
  9. Arrange the prepared balls in the cookie sheet and gently flatten them.
  10. Using a thumb or back of the teaspoon make a indentation in the middle of the cookies to fill the jam.
  11. In a microwave or stove, heat the jam until it is liquefied. Then spoon the liquefied jam in the indentation.
  12. Bake these cookies for 12-14 minutes or until the bottom starts turning brown.
  13. Transfer these cookies to  wire rack, cool completely and store in air tight container.

Notes:

  • The cookie dough will be sticky. When refrigerated it will be easy to work with.
  • The color of the cookies depends on the color of the strawberries and the food color used.
  • Instead of strawberry jam you can use other jams too.
  • If you are using nutella then do not fill the nutella ahead of baking. First bake the cookies let them cool completely, then fill them with nutella.
  • Since every oven is different baking time varies with each oven. Take care not to over bake the cookies.
