I was looking through my blog and noticed that I haven't posted any basic recipes. So today posting, Sambhar podi. Sambhar podi is added to make sambhar which is a staple in any South Indian kitchen. The mix of the spices and the lentils makes this powder more aromatic and flavorful. There are different versions of sambhar podi available with different ratios of spices and lentils. This is a simpler version, which I use.

What are the ingredients needed?
Coriander seeds, 1 cup
Whole red Chillies, 1 cup
Chana dhal, 1.5 Tablespoon
Urad dhal, 1.5 Tablespoon
Cumin seeds, 2 tablespoons
Black pepper, 2 tablespoons
Fenugreek seeds, 1.5 teaspoons
Turmeric, 1/2 teaspoon
Asafoetida, 1/2 teaspoon
How it is made?
- Dry roast chana dhal, urad dhal in a low heat till they lightly change in color.
- Then roast coriander seeds, cumin seeds, pepper, fenugreek seeds till they lightly change color and give nice aroma.
- Then lastly roast the red chillies.
- Let them all cool completely.
- Now grind them all together with turmeric and asafoetida.
- The ground powder may be warm, let it cool.
- Store them in a air tight container and use.


Homemade sambar powder is always the best
