I love to bake. Though my love for baking started years ago, I began baking only after landing in the US. It has been growing as a passion over these years and that is the reason I wanted to be a part of this baking group, Baking Partners. Last month, we baked Julia child's Reine de Saba, and for this month it is the cookies. We had to pick from the Ultimate chocolate cream cheese cookies, Cornflakes cookies and Homemade Oreo cookies or can try all the cookies if we want to. Though I wanted to try all the cookies, I didn't get time because of so many different things. I could only one and I chose this cornflakes cookies. The cookies turned out awesome.Thanks to Priya and Swathi for this recipe which is selected from the book, Baking: Commonsense by Murdoch books.

I just halved the recipe and it yielded around 12 cookies(regular size) and 2 little cookies (I made for my son without the cornflakes) and also I added some extra cranberries along with the raisin except that I didn't change anything else much in the recipe.
What are the ingredients needed?
All purpose flour, 1 cup
Baking Soda, 1/4 teaspoon
Baking Powder, 1/4 teaspoon
Butter(room temperature), 1/4 cup
Sugar, 6 Tablespoon
Egg, 1 no.
Vanilla extract, 1/2 teaspoon
Raisins, 1 Tablespoon
Dried cranberries, 1 Tablespoon
Dessicated coconut, 1/3 cup
Crushed cornflakes, approximately 1 cup
How it is made?
- Preheat the oven to 350 F.
- Sift together flour, baking soda and baking powder and set it aside.
- Cream together butter and sugar till they are fluffy and add a egg and beat them lightly and then add vanilla and mix them till they are well combined.
- Then add the flour mixture to this mixture and using the spatula mix them well, and now add the dessicated coconut, raisins and cranberries and mix them till they are fully incorporated and the dough is smooth.
- In a shallow dish take the crushed cornflakes and take a tablespoon of the cookie dough, drop and roll them in these cornflakes and arrange them in a cookie sheet.
- Once all the cookies are arranged, bake them in the oven for 12-15 minutes until they turn lightly golden.
- Let them cool completely then store them in airtight container.
- Eat and enjoy as desired.
